During our stay Ennio gave us some important rules to remember:


  • Buy a new kitchen and put in it: a big round pan, olive oil, a parsleyplant, lots of garlic strings, a sharp knife, a bottle of marsala.

  • Food does not like to be touched! Touch it as little as possible.

  • When you cook for friends you prepare food that they will put in their mouth (and body), so respect the food.

  • We all like to drink a glass of wine when we are cooking, but we never place the glass on the working space!

  • After we cut something on a wooden board, we always clean the board and the knife because we want to keep the flavours of the different ingredients seperate.

  • We grill without oil or butter. So the meat / fish / vegetable has to be as dry as possible and the pan as hot as possible.

  • To make a creamy sauce: don't use cream but use ricotta. Tastes as nice but with less fat.

  • Oil should not be burned because then it is poison for our body.

  • When you use wine to prepare the food, always use good wine. Cheap wine will ruin the taste of the food.

  • In Summer always use fresh herbs, it's only in Winter that you use the dried herbs.

  • Fresh herbs have to be washed and then left to dry before you use them for cooking. Never use them when they are still wet.
